When I built this new computer, I didn't set up RAID. Now, I'm starting to
think better of myself. RAID is onboard and associated with SATA.
So:
1. If I wanted to go RAID 1, do I have to nuke the current main drive, or
could I mount the second drive, daisy-chain it to the old drive, and let the
controller do the rest?
2. Can I use one of the other plugs to create an array without having to
make the old drive RAID?
Obviously, I'm trying to avoid nuking and reinstalling everything on the
current drive, because I have nowhere to put it right now.

I recommend just plugging things in, installing bits and pieces of
whatever software looks best to make it go, powering down and then
booting up while hoping for the best.

For RAID 1, you basically need a minimum of two identically sized hard
disks. Once installed, you would have to build the RAID through the onboard
BIOS and reinstall all software (OS and programs), make sure you have a
drivers disk made for the install as Windows doesn't support most RAIDs
during the install process. This is exactly the setup I have, and it works
and is very fast. I use to 120 GB HD's and my RAID shows up in Windows as
C:, 240 GB.

You have RAID 0 (striped). If you had RAID 1 (mirroring), Windows would
report your 2 -120 gb drives as 1 drive, 120 gb.

Start from scratch and make sure your have the raid utilities format the
drive as a NTFS drive. You should be able to run 4 drives off of one sata
controller. If you do that you can raid a raid 5 which is your best option,
unless you buy a good controller and run raid 6.

If I have to start from scratch, I don't really want to do it in this heat
(90F, no A/C). So, I just bought a 400GB SATA drive and plugged it in. I'll
set up some sort of backup program and leave it at that.
